A typical day in the life of a Senior Sous Chef:
Support the Head Chef in the day-to-day running of the kitchen, ensuring smooth operations during service.
Lead and inspire a team of chefs, kitchen porters, and other staff, creating a positive working environment.
Act as Head Chef in their absence.
Assist in creating innovative, seasonal menus aligned with Bannatyne's brand and customer expectations.
Incorporate member and guest feedback to enhance menu offerings.
Ensure all dishes are prepared to the highest standards of quality, presentation, and taste.
Maintain portion control and minimize waste to support financial goals.
Ensure full compliance with food safety, health, and hygiene regulations.
Maintain a clean, organised, and safe kitchen environment.
Manage stock levels, ordering, and inventory control to optimise kitchen costs.
Assist in budget management, including monitoring food costs and labor efficiency.
Support the training, and development of kitchen staff.
Work closely with the Bannatyne team to ensure seamless service delivery.
Liaise with other departments to support business goals and event planning.
What we are looking for:
Food Safety Level 2 or 3 certification.
Proven experience as a Senior Sous Chef or in a similar role within a busy kitchen environment, preferably in a hotel or restaurant setting.
Strong knowledge of food preparation techniques, culinary trends, and kitchen equipment.
Strong leadership and team management skills.
Excellent organisational and multitasking skills, with the ability to work efficiently under pressure.
Creative flair with a passion for delivering high-quality and innovative dishes.
Flexibility to work various shifts, including evenings, weekends, and holidays.
Knowledge of health and safety regulations, including COSHH, and a commitment to maintaining a safe working environment.
It would be desirable if you had a culinary arts degree or equivalent certification and experience with menu planning and cost control.
